Ingredients
  

  • 1 tablespoon olive oil
  • 500 g beef mince 15-20% fat is best for flavour
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato purée
  • 1 teaspoon smoked paprika
  • 1 teaspoon mustard powder
  • 800 g tinned chopped tomatoes
  • 500 ml beef stock
  • 300 g dried pasta shapes like fusilli, macaroni, or penne
  • 150 g mature cheddar cheese grated
  • 50 g grated Parmesan cheese
  • 60 g dill pickles finely chopped (plus 2 tablespoons pickle juice)
  • Salt and freshly ground black pepper to taste
  • Optional: Fresh parsley chopped, for garnish

Method
 

  1. Brown the Beef: Place your largest pot or deep frying pan over a high heat and add the olive oil. Once the oil shimmers, add the beef mince. Break it up with a wooden spoon and let it cook undisturbed for 4-5 minutes until the underside is deeply browned and smells intensely savoury. Stir and cook for another 2-3 minutes, until all the mince is browned and sizzling with no pink remaining.
  2. Sweat the Aromatics: Reduce the heat to medium. Add the chopped onion to the pot. Cook for 4-5 minutes, stirring occasionally, until the onion becomes translucent and softens. You'll see it turn from white to a pale, golden hue. Add the minced garlic, tomato purée, smoked paprika, and mustard powder. Stir continuously for 1 minute. The paste will darken slightly in colour and release a deep, rich, almost sweet aroma.
  3. Build the Sauce: Pour in the tinned chopped tomatoes and the beef stock. Stir well, scraping the bottom of the pot with your spoon to lift any browned bits—this is where plenty of flavour is hiding. Bring the mixture to a steady boil. You'll see large, lazy bubbles breaking the surface.
  4. Cook the Pasta: Stir in the dried pasta shapes and the pickle juice. Reduce the heat to a gentle simmer—a few small bubbles should be rising. Cover the pot with a lid and let it cook for 12-15 minutes, stirring once halfway through. The pasta will absorb the liquid and swell, and the sauce will thicken to a luscious, clingy consistency. The sound will change from a bubbling liquid to a thicker, glugging sound as the starch releases.
  5. Cheese and Pickles: Remove the pot from the heat. The pasta should be tender with a slight bite. Quickly stir in the grated cheddar, Parmesan, and the finely chopped dill pickles. Stir vigorously until the cheese is fully melted and the sauce is creamy and smooth. You'll see long, glossy strands of melted cheese as you stir. Taste and season with salt and black pepper.
  6. Rest and Serve: Let the pasta sit in the pot, uncovered, for 2-3 minutes. This short rest allows the sauce to settle and thicken further, coating every piece of pasta perfectly. Serve immediately in warm bowls, garnished with fresh parsley if you like.

Notes

For best flavor, use beef mince with 15-20% fat. The pickle juice adds a key tangy note. Let the pasta rest for 2-3 minutes before serving for the perfect sauce consistency.
