Method
- Salt the pasta water and bring it to a rolling boil. Fill a large pot with water and add a generous tablespoon of salt — it should taste like the sea. Bring it to a vigorous boil; you’ll see large, energetic bubbles breaking the surface. The salt seasons the pasta from the inside out.
- Cook the pasta until al dente. Add your pasta and stir immediately so nothing sticks. Cook according to the packet instructions, usually 8–10 minutes. When you fish out a piece and bite it, there should be a tiny white core at the centre — that’s al dente. The pasta will smell warm and starchy.
- Drain the pasta, but reserve a splash of the cooking water. Tip the pasta into a colander. Before you discard the water, scoop out about 60ml (a quarter cup) — this starchy liquid helps the dressing cling to the pasta later. Shake the colander well so the pasta is dry to the touch.
- While the pasta is still hot, toss it with the tomatoes and oil. Return the drained pasta to the warm pot (off the heat). Add the halved cherry tomatoes, the extra virgin olive oil, and a pinch of salt. Toss gently with a wooden spoon. You’ll see the tomatoes start to soften and release their juices, turning the oil a faint pink. The warmth of the pasta gently cooks the tomatoes without turning them mushy.
- Add the balsamic vinegar, capers, and lemon zest. Drizzle the balsamic vinegar over the pasta, then scatter the capers and lemon zest. Toss again. The vinegar will smell sharp and sweet as it hits the warm pasta. The capers add little pockets of salty brine that cut through the richness.
- Fold in the mozzarella and basil. Gently fold in the torn mozzarella and most of the basil leaves (reserve a few for garnish). The mozzarella will start to soften slightly from the residual heat, becoming creamy without melting into a stringy mess. You’ll see white, soft pillows of cheese scattered among the pink-tinged pasta.
- Let it rest for 5 minutes, then serve. Cover the pot with a lid and let it sit for 5 minutes. This rest time allows the flavours to marry — the tomatoes release more juice, the basil infuses the oil, and the mozzarella settles into a perfect, creamy texture. Uncover and give it one last toss. Garnish with the reserved basil leaves and a crack of black pepper.
Notes
Reserve pasta water to help the dressing cling. Letting the salad rest for 5 minutes before serving allows flavors to meld. Capers are optional but add a nice briny kick.
