- Start with the dressing. In a small bowl, combine the crumbled blue cheese, yogurt, buttermilk, and white wine vinegar. Stir until the blue cheese is mostly incorporated but a few small lumps remain—you want those creamy pockets of flavour. The mixture should look thick but pourable, like a loose custard. Set aside while you cook the chicken; the flavours will mingle beautifully.
- Season the chicken. Place the chicken breasts between two sheets of cling film and gently flatten them to an even thickness of about 2cm—this ensures they cook through at the same rate. Pat dry, then sprinkle both sides with smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the seasoning in so it clings to the surface; you'll smell the paprika warming as it hits the pan.
- Cook the chicken. Heat the vegetable oil in a large non-stick frying pan over medium-high heat until it shimmers and a drop of water sizzles on contact. Lay the chicken in the pan—you should hear a satisfying hiss. Cook for 4 minutes without moving, until the underside is golden brown and lifts easily from the pan. Flip and cook another 4 minutes. The chicken should feel firm to the touch but still give slightly; if you're unsure, cut into the thickest part—the juices should run clear and the flesh should be opaque throughout.
- Rest and shred. Transfer the chicken to a clean board and let it rest for 3 minutes. This resting period is vital—it lets the juices redistribute so the meat stays moist. Once rested, use two forks to shred the chicken into bite-sized pieces. You'll see the steam rising and smell that smoky, spicy aroma.
- Toss in buffalo sauce. Place the shredded chicken in a medium bowl and pour the buffalo-style hot sauce over it. Toss well with the forks until every piece is coated. The chicken should look glossy and vibrant orange-red, with the sauce clinging rather than pooling at the bottom.
- Assemble the salad. In a large salad bowl, combine the chopped romaine, carrots, celery, red onion, and cherry tomatoes. Give everything a gentle toss so the vegetables are evenly distributed. The romaine should be crisp and bright green, the carrots adding a pop of orange.
- Dress and serve. Drizzle about half the blue cheese dressing over the salad and toss gently to coat. Top with the buffalo chicken, then drizzle the remaining dressing over the top. Serve immediately while the chicken is still warm and the lettuce is crisp. The contrast of warm, spicy chicken against cool, creamy dressing is exactly what you're after.

For a lighter dressing, substitute low-fat yogurt and buttermilk. Let the chicken rest after cooking to keep it moist.
